Non-Dairy Coconut Butternut Squash & Kale Soup! (Serves 4-5)
The weather is (finally) cooling down, and we’re embracing the sweater weather! This soup (courtesy of Zuma Valley) is perfect for a chilly evening. Not only is it Paleo and Vegan, it’s also delicious!
Ingredients:
2 packs (6 oz) Zuma Valley Coconut Cream
1 pack (4oz) Zuma Valley Coconut Meat
4 cups diced butternut squash
2 cups chopped kale
1 large onion
2 cloves of garlic crushed
4 cups vegetable broth
2 tbsp coconut or olive oil
Salt and pepper
Directions:
Heat the oil in a large pan over a medium heat. Add the onion, garlic and butternut squash and stir for about 5 minutes. Add the veggie broth and simmer for about 20 minutes. When about done add kale, salt and pepper. Transfer mixture to blender and add the Zuma Valley Coconut Cream. Blend until smooth. Transfer to bowl and garnish with Coconut Meat and favorite seasonings. Enjoy!
