Through years of vetting, forming, and maintaining relationships with local farms and family producers, we are able to bring you the best of the best. With fall in mind, we wanted to share one of our amazing partners that supplies us, and ultimately you, with fresh picks of the season.

This season, Cuyama Orchards is supplying Mother’s with Crimson Gold Apples and Gala Apples. Cuyama Orchards was established in 1992 when Howard and Jean Albano plowed under 20 acres of hay in front of their farmhouse and planted Nagafu Fuji apples that had made their entrance to the US from Japan.

By 1997, they had 80 acres of Fuji and Pink Lady Apples in production when they partnered with their son Byron to handle sales and marketing. Together they developed an enthusiastic local following for the excellent apples that Howard and Jean were producing. In 1999, they completed transitioning to certified organic production, and continued expanding their orchards to meet the burgeoning demand for their fruit.

Since those early years, the Albano’s have continued to work hard to grow the very best apples, and to partner with local and regional markets, farmer’s markets, and a variety of traditional and not-so-traditional food distributors to get their fruit from their farm to your table.

Cuyama Orchards is nestled in the uppermost reaches of the Cuyama Valley in a rugged mountainous corner of Santa Barbara and Ventura Counties in California. At 3,300 feet in elevation, Cuyama Orchards enjoys the ideal microclimate for growing sweet, crunchy, juicy apples that are bursting with flavor. The warm days late into the fall along with crisp cool nights allow for them to harvest their fruit with full flavor at the peak of ripeness, including the Crimson Gold and Gala Apples they will be supplying us.

The Crimson Gold Apple is a classic American Heirloom apple. It was discovered by Albert Etter in Humboldt County, California. This variety was lost for decades, but thankfully, it was re-discovered from an original tree. The Crimson Gold is perfect for fresh snacking and a prized ingredient for pastries, jellies, chutneys, and cider.

As for the Gala Apple, these apples are a “summer apple” that ripen ahead of just about all other varieties. Cuyama Gala are sweet, crisp, and fragrant. Great for a snack!

Slow Cooker

Pumpkin and Banana Oatmeal

For those who love all things pumpkin, especially during the fall season, this recipe is for you. A pumpkin twist on a classic everyday recipe that is sure to delight your tastebuds. The best part is that you can cook it overnight, making breakfast easy in the morning.

Ingredients:

• 1 1⁄2 cups organic steel cut oats

• 4 cups water

• 2 cups organic unsweetened almond milk

• 1 large ripe organic banana, mashed

• 1⁄2 cup canned organic pumpkin puree

• 2 T. organic maple syrup

• 2 t. organic vanilla

• 1 1⁄2 t. organic ground cinnamon

• 1⁄2 t. organic nutmeg, freshly grated

• 1⁄2 t. kosher salt

Directions:

1. Place all ingredients into slow cooker and stir to combine.

2. Cover and cook on low for 7-8 (overnight works great!).

3. Remove cover and stir.

Fall Dinner Idea

Butternut Squash Mac and Cheese

Tis’ the season of butternut squash and if you’re looking for ways to make your usual dinner recipes a little more seasonal and exciting, this one is sure to hit the spot. It’s comfort food with an added twist. If you try it out, make sure to post it on your social media and tag us @mothersmarkets.

Ingredients:

• 1 container cut organic butternut squash

(Mother’s cut and ready butternut squash in our produce department)

• 1 T. organic olive oil

• 1 lb. organic elbow macaroni

• 5 cups organic milk

• 2 T. organic butter

• 3 T. organic flour

• 1⁄4 T. organic freshly ground nutmeg

• 2 cups organic gruyere cheese, shredded

• 2 cups organic sharp cheddar cheese, shredded

• 1 1⁄2 cups organic panko bread crumbs

Directions:

1. Preheat oven to 400°F.

2. Roast butternut squash tossed in olive oil for 30 minutes until tender.

3. Cook macaroni, drain and set aside.

4. Using blender, food processor or immersion blender, puree the squash with 1 cup of milk.

5. In a large skillet, melt the butter. Add flour and nutmeg. Cook for 3 minutes until flour mixture starts to smell nutty. Add the remaining milk and cook, whisking continually until smooth. After sauce has thickened, turn heat to low and add the butternut squash mixture. Stir in macaroni and season with salt and pepper to taste.

5. Layer the macaroni mixture with cheese in a greased 4-quart casserole dish. 6. Sprinkle panko crumbs on top and dot with butter.

7. Bake for 30 minutes until warm and bubbly.

All About Elderberry

Come fall time, many start looking for immune- boosting supplements to help them get through cold and flu season. One such ingredient that may boost your immunity is elderberry and over the past few years, it has become increasingly popular.

Elderberries are the dark purple berries that originate from the European elder tree. The berries and flowers of such trees are full of antioxidants and vitamins, including Vitamin C, and used in many elderberry supplements. According to the National Center for Complementary and Integrative Health, “some preliminary research suggests that elderberry may relieve symptoms of flu or other upper respiratory infections.” While more research needs to be done, the increasing popularity of elderberry supplements suggests that people believe it may work.

Slow Cooker

Chicken Tacos

A slow cooker recipe is always a good idea in the fall as the weather gets cooler and this one is very easy to put together. Hearty and flavorful with a little spice, these salsa chicken tacos are sure to be everyone’s new favorite dinner.

Ingredients:

• 8 organic boneless skinless chicken thighs

• 16 oz. of your favorite organic jarred salsa

• Organic corn tortillas

• Organic sour cream

• Organic cheddar cheese, shredded

• Organic jalapeños, sliced or diced (jar or can optional)

Directions:

1. Place chicken thighs and salsa in slow cooker on low for 8 hours.

2. After cooking, shred chicken in the salsa and keep on warm until serving.

3. Using a slotted spoon, spoon the chicken mixture into warmed corn tortillas. Top with cheese, sour cream, and sliced jalapeños.

4. Serve with rice and beans!

Game Day Snack

Better-for-You 7 Layer Bean Dip

Game day isn’t game day without good snacks and one of the quintessential party snacks is a seven layer bean dip. While many game day snacks tend to be a little unhealthy, this is one that can be a better-for-you option if you can use better ingredients! Here’s what we like to use for ours.

Ingredients:

• Amy’s Organic Refried Beans or Organic Vegetarian Refried Beans

• Taco Seasoning of choice

• Mother’s Homemade Grab & Go Guacamole

• Organic Valley Sour Cream

• Mother’s Homemade Grab & Go Fire-Roasted Salsa

• Organic Valley Organic Finely Shredded Mexican Cheese Blend

• Organic olives

• Organic tomates, chopped

• Organic green onions, chopped

Directions:

1. Mix refried beans with taco seasoning in a bowl.

2. In a casserole dish or your dish of choice, scoop

in bean mixture and smooth out so it’s an even layer.

3. Add guacamole in an even layer and repeat this process for the sour cream, salsa, and cheese.

4. Sprinkle on tomatoes, olives, and green onions. 5. Chill until ready to serve.

Why Multivitamins are Essential Nowadays

Multivitamin supplements are very popular nowadays, with estimates showing that one-third of all American adults and one-quarter of children take a multivitamin supplement. But why are multivitamin supplements so popular?

Your Food is Losing Nutrients

The body needs a wide array of nutrients from food to function properly. But what happens if those foods don’t contain enough of the amount of nutrients needed? Research shows that the foods grown today are not as nutritious as those in past decades due to soil erosion, mechanical tillage, and the use of chemical fertilizers and pesticides.

In fact, we’re producing more carbon dioxide— also known as CO2, a colorless gas that becomes poisonous when there’s too much of it—than our planet can handle. From increased manufacturing, deforestation and vehicle emissions, all these things that create excess CO2 can harm us and the planet. When it comes to plants, CO2 slows down circulation which leads to plants absorbing fewer minerals.

In addition to depleted soil, according to the US Department of Health and Human Services and Agriculture, the typical American diet tends to be low in important nutrients such as vitamins A, C, D, and E, calcium, magnesium, iron, potassium and fiber. The combination of depleted soil and a nutrient-deficient diet creates nutrient gaps that have us feeling less than healthy. That’s where multivitamin supplements prove useful.

The Benefits of a Multivitamin

According to a consensus statement featuring a panel of 14 international experts in nutritional science and healthcare, multivitamin supplements can significantly improve nutritional status and can also be individualized according to age, gender and other characteristics to support individualized health needs.

In addition to filling nutritional gaps, research shows that taking a multivitamin supplement may also help support vital systems, such as the health of the brain, immune system, heart, and eyes.

Taking Multivitamin Supplements? Timing is Key

Many people who take supplements to support a healthy lifestyle don’t know that the time of day you take your vitamins can affect how efficiently your body utilizes them.

If you’re taking a water-soluble vitamin, you can take it on an empty stomach as long as you drink a glass of water with it. Vitamins B and C are water-soluble and are best taken in the morning be- cause B vitamins can be energizing, so you don’t want to take these late in the day because they can disrupt your sleep. Don’t forget to regularly consume these types of vitamins; they don’t get stored in the body, so replenishing them regularly is essential for optimal health.

On the other hand, fat-soluble vitamins are not absorbed well without food, or they may cause an upset stomach. People tend to eat fatty foods in the evening, so it’s a great time to take fat-soluble vitamins like A, D, E and K because they’ll be better absorbed.

What if you’re taking a multivitamin? Multivitamins are a little tricky because they contain both water-soluble and fat-soluble vitamins. Medical doc- tors suggest taking multivitamins with food and water. However, Dr. Perez-Gallardo recommends taking water-soluble and fat-soluble vitamins separately, to improve absorption. Caramel Apple Nachos

This one is a crowd pleaser that could not be easier to create for a fun fall dessert. It’s the perfect way to end a kid’s Halloween party, but adults are sure to love it too. The best part is that you can really make it your own by switching up which toppings you use – add one or mix a few together for a custom concoction.

Ingredients:

• Organic Granny Smith apples (or your favorite variety)

• Caramel sauce (homemade or jarred)

• Toppings – Your preference, but some tasty options include:

o Granola (Mother’s Homemade is the best!)

o Chocolate bark (Mother’s Homemade Chocolate Bark chopped works great)

o Rainbow sprinkles

o Mini marshmallows

o Organic chopped nuts

o Crushed pretzels

Directions:

1. Slice the apples and arrange on a platter (Do this right before serving so they don’t turn brown!).

2. Drizzle warmed caramel sauce over apples.

3. Sprinkle with your favorite toppings.

Twist on a classic

Rotisserie Chicken Stroganoff

Give classic stroganoff a twist with some shredded rotisserie chicken! This whole dinner comes together quickly, making it a new staple for busy weeknights.

Ingredients:

• 2 heaping cups of Mother’s roasted chicken, shredded (about 1 lb of meat) • 12 oz. egg noodles

• 4 T. butter, divided

• 1 cup organic diced onion

• 8 oz. organic cremini mushrooms, sliced

• 2 cloves organic garlic, minced

• 2 T. all-purpose flour

• 1 T. Worcestershire sauce

• 1 1⁄2 cups organic chicken stock

• 1⁄2 cup sour cream

• 1⁄2 T. kosher salt, and black pepper to taste

• Organic parsley to garnish

Directions:

1. Cook noodles: Cook the egg noodles in salted water according to the package directions. Once cooked, drain and return them to the pot with two tablespoons of butter, and toss to coat.

2. Cook onions and mushrooms: Melt the remaining butter in a large skillet over medium heat. Add the onions and mushrooms and cook for 6 – 8 minutes until the vegetables have softened and browned. Add the garlic and cook for a final 30 seconds, until the garlic is fragrant. Season with a pinch of salt and pepper.

3. Make the sauce: Add the flour to the skillet and use a spatula to work the flour in, forming a paste-like coating on the vegetables. Cook for a minute and then add the Worcestershire sauce, salt, and some freshly ground black pepper. Slowly add the chicken stock in 1/2-cup increments, stirring constantly to prevent lumps.

4. Reduce the sauce: Once your chicken stock has been added, let the sauce thicken for a few minutes and then stir in the shredded chicken. Remove the pot from the heat and add the sour cream, and stir to combine. Taste the sauce and season it with salt and pepper to your liking.

5. Finish: Return the pan to low heat and warm until the sauce is once again piping hot. If at any point the sauce gets too thick, thin it with a drizzle of cooking water from the pasta.

6. Serve: Serve the stroganoff either by stirring the noodles straight into the sauce to combine everything, or portioning out the noodles onto individual plates and spooning the sauce over the top. Garnish with fresh parsley.

Salmon with Wine Sauce

Did you know that Mother’s carries its own line of sustainable seafood including delicious Atlantic salmon? If you’re wondering how to cook the salmon for a restaurant-worthy meal at home, trying this recipe is a must. It’s super tasty and pairs well with fresh organic asparagus.

Ingredients:

• 4 pieces Mother’s Atlantic salmon

• 1⁄2 cup sugar

• 2 cups red wine (pinot noir works well here) • Fresh organic rosemary

• Salt and pepper to taste

• 1 T. balsamic vinegar

• 1 T. butter

Directions:

1. Preheat oven to 400°F.

2. Place sugar in saucepan over medium heat. Without stirring, cook until sugar melts and starts to turn a golden brown. You can swirl or shake the pan occasionally.

3. Remove from heat and carefully add the red wine.

4. Put over high heat, add a sprig of fresh rosemary and cook until the wine is reduced and is the consistency of syrup. This should take about 15 minutes.

5. Remove rosemary sprig, add the balsamic vinegar and butter, and stir. Hold until salmon is finished.

6. Heat a cast iron pan until very hot. Season salmon with salt and pepper. Place fish in the pan and immediately place into the oven. Cook 4 minutes. Turn fish over and cook 3 minutes for medium rare. (More time if you prefer it.)

7. Remove salmon.

8. Top with sauce and garnish with chopped rosemary.

BUTTERNUT SQUASH

With a long bell shape and tan-yellow skin, Butternut Squash are one of the most recognized squash of the season. This variety has a vibrant orange flesh and sweet, nutty flavor that is reminiscent of a cross between pumpkin and sweet potatoes. While you can roast and serve butternut squash by itself, it pairs well with both sweet and savory dishes and is delicious in soups, curries, pastas, and more.

ACORN SQUASH

Shaped like an acorn with longitudinal ridges on its exterior, Acorn Squash has a pale yellow flesh. While it does have a sweet, nutty flavor, it’s a bit more mild and watery than Butternut Squash. It also has a more fibrous texture. It too can be roasted, but it is also delicious when incorporated in muffins, breakfast burritos, salads, and more.

KABOCHA SQUASH

While not as well-known as other squash varieties, Kabocha Squash offers a taste similar to a cross between an acorn squash and sweet potato. With a dark green skin and orange flesh, this variety is sweeter than a butternut squash and has a chestnut-like, fluffy, yet dry, texture. It’s commonly used in Japanese and Korean cuisines and can be a substitute for butternut squash or acorn squash in many recipes.

DELICATA SQUASH

Named for its delicate and edible skin, Delicata Squash has a creamy-yellow cylindrical exterior with skinny green stripes. It’s sweet, tender, creamy, and easy to cook because no peeling is required! It pairs well with salmon, lamb, and more, but is also delicious on its own. Simply slice, drizzle with olive oil, and sprinkle with a little salt and pepper for a super easy side dish.

SPAGHETTI SQUASH

Perhaps one of the most well-known aside from butternut squash, Spaghetti Squash is oblong shaped with a smooth yellow skin and creamy- yellow flesh. It has a mild, earthy taste with a slight sweetness and is most commonly roasted and then turned into “noodles” by using a fork to separate the squash strands from the skin.
