There is just something about the arrival of spring. We can look forward to a season of graduations, weddings, cookouts, pool parties, moving on, and new beginnings. This year, the arrival of spring marks an important time in our world history. There is hope on the horizon for us to return to the sanctuary of being together, celebrating together, and sharing a meal with those we love without worry. While we still must remain vigilant in our health and safety practices, I am optimistic that we will take what we learned during this challenging time and use it to create more grace and love for a better future. We will be more grateful than ever for our health, have a deeper appreciation for the little moments, and continue to connect virtually with those we cannot see as frequently in person.

Through the ups and downs of this past year, Mother’s has been here to serve your family’s health and wellness and will continue to be here. With the opening of two new stores later this year — Sunset Beach and Corona del Mar — we not only hope but know that the best is yet to come.

Easy Easter Breakfast

VEGGIE QUICHE

Spring has indeed sprung, and it’s the perfect time to incorporate some delicious seasonal

produce in your Easter breakfast! Spring is the season of beautiful green vegetables, and it’s

so easy to integrate them into a variety of meals. One dish that’s always a hit with friends and

family for breakfast is a good quiche, which is both easy to make and highly customizable.

This recipe uses the best spring flavors to make your Easter morning special and nutritious.

INGREDIENTS:

• 1 sheet of frozen pie crust

• 8 organic eggs

• 1 cup heavy cream

• 2 cloves minced organic garlic

• 1 minced organic shallot

• ½ cup organic goat cheese, crumbled

• ½ small organic zucchini, sliced into

thin rounds

• 1 cup organic baby spinach

• ½ cup thinly sliced organic asparagus

• 4 chopped bacon rashers

• 1 teaspoon salt

• 1 teaspoon pepper

DIRECTIONS:

1. Preheat oven to 350 degrees.

2. In a skillet, sauté the garlic, asparagus,

bacon, and shallot until lightly browned.

Allow the ingredients to cool.

3. In a medium bowl, whisk together the eggs,

cream, salt, and pepper. Add in the sautéed

ingredients and mix in with the goat cheese.

4. Lay the pie crust into a prepared pie dish

and poke holes in the bottom with a fork —

par-bake for 10 minutes.

5. Remove from the oven and pour in the egg

mixture.

6. Lay the zucchini rounds on top, then bake

for 15 minutes.

7. Remove from the oven, wrap the crust edges

with aluminum foil, and return to the oven for

another 15-20 minutes.

8. Remove from the oven and allow it to sit for

5 minutes. Enjoy!

Sweet & Delicious

PASSOVER CHAROSET

With Passover on the horizon, you might have already started planning what you’ll be making

for your seder this year. The traditional staples will always be there, and you can find new and

unique ways to either spice them up or try a new twist on your favorites. One of the sweeter

things on the Passover menu is Charoset. Every seder dish has its own story and meaning, and

this Ashkenazi dish made of diced apples with nuts and wine symbolizes the mortar used by

the Hebrew slaves in Ancient Egypt. Here is a simple, easy-to-make recipe for Charoset that will

make everyone at your Passover table happy.

INGREDIENTS:

• 2-3 apples of your choice

• 4 tablespoons sweet red wine

• 2 tablespoons ground cinnamon

• 1 tablespoon brown sugar or honey

• ¾ cup chopped walnuts

DIRECTIONS:

1. Lightly toast the walnuts in a pan over

medium heat and set aside to cool.

2. Core and dice the apples.

3. In a bowl, evenly mix all ingredients

together. Enjoy!

All Natural

EASTER EGG DYE

Looking for a natural way to dye Easter eggs this year? The world around us is full of unique

and beautiful colors, and harnessing those colors to dye your Easter eggs can be lots of fun in

itself. Here are some all-natural ways you can make homemade Easter egg dye out of things

you might already have in your kitchen.

1. Add these ingredients into one cup of boiling water each. After bringing the ingredients

and water to a boil, simmer covered for about 15-30 minutes.

2. Remove from heat and cool until lukewarm.

3. Strain out your solids, if any. Then add in one tablespoon of white vinegar.

4. Place your room temperature hardboiled eggs in an even layer in a dish with sides that

reach higher than the top of your eggs. Then pour your dye of choice in until the eggs are

completely covered.

5. Cool and let sit in the refrigerator until the eggs reach the color you want. Have fun!

Purple cabbage

Chop up one cup of purple cabbage for a rich blue color.

Yellow onion skins

Next time you chop up a yellow onion, don’t throw away those skins! They are great for a bright orange tone dye.

Red onion skins

Follow the same steps as the yellow onion, but you will get a pretty purple or red color this time.

Organic ingredients

Organic, fresh produce is the way to go for all-natural egg dye. Aside from these ingredients, the only other necessities will be water, white vinegar, and organic eggs.

Beets

Anyone who has cut beets while wearing white clothes knows how powerful their red/pink dyeing abilities are. Take one beet and shred it with a cheese grater.

Ground turmeric

Two tablespoons of this beautiful golden powder are perfect for golden yellow eggs.

DIRECTIONS

1. Add these ingredients into one cup of boiling

Refreshing Spring Drink

year-round with their environmental initiatives. Every bit counts, and your support of these

Cinco de Mayo MOCKTAIL RECIPES

It seems like everyone has been improving their home-bartending skills these days, and with Cinco de Mayo coming up, you may be thinking about what special drinks you can concoct to celebrate. Pineapple-Lime Mocktail

INGREDIENTS:

• ½ cup canned pineapple juice

• 1 organic lime, juiced

• Fresh mint leaves

• ½ cup club soda

• 1 tablespoon simple syrup

DIRECTIONS:

1. Add mint leaves to your glass.

Crush with a spoon or small pestle.

2. Add in a few ice cubes, followed by

club soda, lime juice, pineapple juice,

and simple syrup.

3. Stir until evenly mixed, and enjoy!

Tropical Coconut Mocktail

INGREDIENTS:

• ½ cup coconut milk or cream of coconut

• ½ cup pineapple juice

• ½ cup frozen organic mango chunks

• 2 cups ice

• 1 organic lime for garnish

DIRECTIONS:

1. Add all ingredients, except the lime,

to a blender and blend until well-slushed.

Healthy Cinco de Mayo VEGAN RED POZOLE

Soup is one of those foods that is great for any season. It can be super healthy, adjustable to any dietary needs, and easy to make using fresh, organic ingredients! To celebrate Cinco de Mayo, why not try making one of the most delicious Mexican soups with a vegan twist? This vegan pozole recipe has all the flavor and warmth of a traditional pozole, and it makes about a ½ gallon of soup, which is enough to feed a few people. It also can easily be doubled for a crowd! If you’ve never tried pozole before, you’ll absolutely fall in love with this one.

INGREDIENTS:

• 2 teaspoons oleic safflower oil

• 9 ounces zucchini squash, 1 in. diced

• 4 ½ ounces red bell pepper, 1 in. diced

• 4 ½ ounces yellow onion, 1 in. diced

• 35 ounces white corn pozole

• ¼ ounce peeled garlic, minced

• 1 dash ground black pepper

• 1 dash dried oregano

• 1 dash chili flakes

• ½ cup water

• 21 fl ounces vegetable broth

• ½ ounce guajillo chili, pureed

DIRECTIONS:

1. Wash, dry, and chop all vegetables. Cook

guajillo chili in water for 15 minutes. Take out

of water, remove stems, drain excess water,

and then blend.

2. In a large pot, cook vegetables in oil for

8 minutes on medium heat.

3. Add half of the hominy with water, and half

of the hominy blended with hominy water

and blended guajillos to the pot.

4. Cook vegetables and hominy for 10 minutes.

5. Add the rest of the ingredients, black pepper,

oregano, garlic, etc., and simmer for 20

minutes to complete the cooking process.
