Marvelous Mushroom Gravy

Mushrooms are an underrated superfood. They are full of B vitamins, Selenium, Potassium, Copper, and one of the rare plant foods that can have vitamin D. Enjoy this oil-free gravy for a heart healthy and flavorful addition to your Thanksgiving meal.
Cooking supplies– Large skillet, large spoon, cutting board, large kitchen knife
Ingredients:
2 cups white or crimini mushrooms
1 & 1⁄4 cup vegetable broth (separate 1 cup and 1⁄4 cup)
2 Tbsp shallots, minced
1 tsp garlic powder
2 cloves garlic, minced
1⁄2 cup yellow onion, minced
4 heaping Tbsp of finely blended oat or tapioca flour
2 tsp dried thyme or 3 tsp chopped fresh (offers best flavor)
2 tsp black pepper
2 tsp pink salt
Directions:
1. In a skillet over medium to medium-high heat, add the shallot, onion, garlic, 1⁄4 cup vegetable broth, and
mushrooms and cook for 10 minutes, stirring frequently. Cook until the mushrooms are soft and brown, and
most of the liquid is evaporated.
2. Slowly stir in the oat or cassava flour with a whisk and reduce heat to medium. Cook for another minute or
two. It is very important to whisk in the flour slowly to prevent large clumps in the gravy.
3. Slowly add the 1 cup of vegetable broth while whisking to reduce clumps. Then add in the thyme and whisk
again.
4. Reduce heat to simmer and continue to stir until it reaches desired thickness – about 5-10 minutes. If it
appears too thin, add a touch more flour and whisk. If it’s too thick, add more broth.
5. Season with salt and fresh ground black pepper to taste. Serve over cauliflower mashed potatoes and/or
lentil loaf.
